Bar manager Massimo Golfetto has named his cocktail Cuore, which means heart in Italian, and is a reference to the influence that head chef Tom Cenci’s Mortimer House kitchen menu takes from an upbringing in Lake Orta and the Amalfi coast.
The cocktail is a pulse-raising fruit-bomb that takes our awfully English vodka and beats it vigorously with Cointreau, Chambord, raspberry and vanilla syrup, egg white and lime, topped off with a throbbing red heart — but just be careful not to break it.
